On April 21, the Japan Foundation Center for Cultural Exchange in Vietnam is pleased to present an exhibition tour and lecture titled “Japanese Sushi: History and Transformation,” led by Professor Hibino Terutoshi from Aichi Shukutoku University, Japan. 

About the Exhibition “I Love Sushi” 

In 2013, washoku—Japanese cuisine—was recognized by UNESCO as an Intangible Cultural Heritage, with sushi being one of its most iconic examples. Originally from Southeast Asia and southern China, sushi was introduced to Japan over a thousand years ago. In Japan, sushi underwent a remarkable transformation, drawing on the country’s rich natural resources and the creativity and dedication of the Japanese people. Today, sushi is not only known for its beauty and deliciousness but also for its health benefits. The most popular variety today, nigiri-zushi, first appeared about 200 years ago in Edo (modern-day Tokyo). 

Sushi has since gained worldwide popularity and is now beloved across the globe. Despite its widespread appeal, many of sushi’s fascinating aspects remain unexplored. The traveling exhibition “I Love Sushi” offers a closer look at the evolution of sushi, from its traditional roots to how it has adapted to Japan’s regional cultures, environments, and lifestyles. The exhibition also delves into the vibrant sushi culture of today and prompts reflection on the future of sushi amid contemporary food challenges. As part of the exhibition, visitors can even experience a simulation of dining at a sushi restaurant in Japan. 

This event is organized in conjunction with the “I Love Sushi” exhibition at the Japan Foundation Center for Cultural Exchange in Vietnam and a small part in AEON MALL Long Bien. Professor Hibino Terutoshi, a leading expert in traditional sushi and the exhibition’s supervisor, will provide an insightful lecture about the history and transformation of sushi in Japan. 

Attendees will have the chance to learn about the origins of sushi, its evolution through the centuries, and its many varieties. Additionally, there will be an opportunity for direct interaction with Professor Hibino, who has conducted pioneering research on sushi and played a major role in the development of this exhibition.

About the Speaker 

Professor Hibino Terutoshi, born in Gifu Prefecture in 1960, is a renowned sushi researcher and serves as the Honorary Director of the Shimizu Sushi Museum in Shizuoka Prefecture. He earned both his bachelor’s and master’s degrees from Nagoya University and has held positions as curator at the Gifu City Museum of History, professor at the Nagoya University Graduate School of Economics, and specially appointed professor at the Kyoto Washoku Research Institute of Kyoto Prefectural University. He is currently a professor at Aichi Shukutoku University. 

Professor Hibino’s notable publications include “Portrait of Sushi” (Daikosha, 1997), “Searching for the History of Sushi” (Iwanami Shoten, 1999), and “Encyclopedia of Sushi” (Tokyo-do Shuppan, 2015).
